How to Eat Seasonally This June

Summertime is fully underway! And the refreshing, juicy Summer produce is in full bounty.

The Summer months are arguably the best time to eat seasonally (in my opinion) because there is so much to choose from and enjoy. The flavors are bright and crisp, sweet and delicious. And the colors are lovely, too.

With all of those beautiful colors comes plenty of phytonutrients - compounds found in plants that are thought to have antioxidant, anti-inflammatory, and other disease fighting properties that keep our bodies functioning optimally. Challenge yourself to fill your plate with plenty of different colors this Summer!

June is also a great month to head out to your local farmer’s market on a sunny day and get a taste of what’s really in season week by week in your local area. The farmer’s market is generally buzzing on warm summer mornings. Take the whole family, meet up with friends, and get to know your farmers.

Eating seasonally boosts nutrient content, tastes better, is better for the planet and can save us money on our grocery bill.

Simple June Recipe Ideas:

Bell Peppers

  • Grill and serve as a side dish to your favorite protein.

  • Stuff them with ground beef, chicken, or turkey and some brown rice & herbs and pop them in the oven or smoke them in the smoker on those evenings when it’s too hot to stand over the stove and cook.

  • Slice and use in a fresh veggie sandwich along with tomatoes, spinach and avocados.

Tomatoes

  • Chop and toss with olive oil, salt, and pepper. Serve on top of some crusty bread. Add balsamic vinegar, basil, parsley, lemon juice, garlic, or any other herb you like to mix it up!

  • Make a cool & refreshing summertime gazpacho with tomatoes, cucumbers, and olive oil.

  • Make a fresh tomato salad to add as a side dish to any summer bbq.

Watermelon

  • Remove the rind from a seedless watermelon and blend the rest in a blender. Pour into a popsicle mold and freeze for a naturally sweet watermelon treat!

  • Cube and top with feta, mint, and diced cucumbers for an easy summer salad.

  • Craving something a little spicy? Try a watermelon salsa!
