How To Eat Seasonally This January

The holiday excitement has come to and end, and here we are again beginning a brand new year. January is the perfect time to slow down and reach for foods that feed the soul (and your immune system!).

January can easily feel like a bleak month with it’s dreary weather and often gray and frigid forecasts, at least over here in the PNW.

But delicious seasonal produce is still in full swing and full of color! You may be surprised to find out about all of the options you have this month.

Eating seasonally boosts nutrient content, tastes better, and can even save us money. And with the bounty of variety to enjoy this month, you’ll have plenty of options to choose from.

Take it one step further

To help keep blood sugar levels stable, aim to pair the produce on this list with protein and healthy fats. Think extra-virgin olive oil, grass-fed butter, avocados, coconut oil, nut butters, full fat cottage cheese and greek yogurt, etc.

For example, a bowl of yogurt topped with sliced kiwis & grapefruit, and a sprinkle of chia seeds. Or oven roasted brussels sprouts tossed in ghee and served alongside chicken or beef at dinner.
